My mom makes this every year for Thanksgiving. It's hearty and healthy and a great way to use all those pumpkins. The perfect Fall soup that everyone loves.
Ingredients:
• 1/2 sweet onion, finely chopped
• 1 teaspoon minced garlic
• 1 medium sweet apple, finely chopped (substitute- 1 cup apple sauce)
• 1 tablespoon butter
• 1 cup cooked pumpkin, canned or homemade
• 1 heaping teaspoon curry powder
• 3 cups chicken broth
• salt and white pepper
Garnish:
• roasted pumpkin seeds (aka pepitas)
• plain yogurt or sour cream
• fresh thyme sprigs
1. In a medium pot saute onion, apple, and garlic until soft.
2. Add pumpkin, curry powder, and chicken broth. Salt and pepper to taste.
3. Bring to a boil, stirring well. Reduce heat to low and simmer for about a half hour. Stir occasionally.
4. Serve and top with a dollop of yogurt and sprinkle of pumpkin seeds (pepitas). Garnish with sprig of thyme.
