This Irish Soda Bread recipe is moist, cake-like, and delicious. This bundt pan soda bread is full of sweet raisins and is the perfect way for your family to celebrate St. Patrick's Day! It’s cheap and easy to make, and has many variations you can use to make it your own.
Ingredients:
2 ¼ Cups Flour
½ Cup Sugar
1 ½ Tsp Baking Powder
Pinch Salt
½ Tsp Baking Soda
¼ Cup Butter, softened
1 ¼ Cups Raisins
1 Cup Buttermilk
¼ Cup Heavy Cream
1 Egg
Glaze:
2 Cups Powdered Sugar
¼ Cup Butter
½ Cup Heavy Whipping Cream
½ Teaspoon Vanilla Extract
Directions:
- Preheat oven to 350 degrees.
- In a mixing bowl, add in all dry ingredients, mix well. (DRY: Flour, Sugar, Baking Powder, Salt, Baking Soda)
- In the same bowl, slowly add wet ingredients (WET: Butter, Raisins/Cranberries, Buttermilk, Heavy Cream, Egg)
- Line a bundt pan with parchment paper or use cooking spray. (You can use a loaf pan, cake pan, or muffin tins if you want.) Pour in the mixture and place it inside the middle of the oven.
- Cook for 30-45 minutes, check after 30 minutes to see if a toothpick or fork comes out clean when placing it inside the cake.
