Peanut Butter Granola Bites

Looking for an easy and inexpensive treat for your kids? This bite-sized snack is perfect for your little ones to eat and refuel! They even make for a nutritious breakfast. They are packed with protein to keep even the busiest kids running all day. There are a few different ways to make this no bake snack, and it can be altered to use the ingredients already in your kitchen or to work around food allergies. Get mixin mamas!

Ingredients:

¼ Cup Peanut Butter

¼ Cup Honey

1 Cup Rolled Oats (Old Fashioned or Quick)

1 Teaspoon Salt

Optional: Chopped Nuts (or Crunchy Peanut butter)

Directions:

  1. Add all ingredients into a bowl. Mix well until everything is evenly coated in the peanut butter and honey. (Note: to make the mixing process easier, microwave the peanut butter and honey for 20 seconds before adding).
  1.  Refrigerate 20-25 minutes, just enough for the “dough” like mixture to settle. This makes it easier to form scoops without it being too sticky.
  1. Spray a spoon or ice cream scooper with cooking spray. Roll each scoop into a ball. Place them in a container or on a tray and refrigerate 1 hour or until ready to serve.

For a sweeter granola bite add ¼ cup of mini chocolate chips and ¼ cup of shredded coconut!
