Very Berry Healthy Oat Muffins

Directions: Makes 12 regular muffins or 24-30 mini muffins.

1. Preheat oven to 375 degrees and line muffin tin with liners.

2. Whisk together dry ingredients in a large bowl and set aside.

3. In a medium bowl, whisk together yogurt, egg, melted coconut oil and vanilla. Slowly pour the wet ingredients into the dry ingredients and stir until just combined.

4. Gently fold in berries to the batter. Divide batter evenly between 12 regular or or 24 mini muffin tins.

5. Bake for 20-25 minutes for regular size, 17-20 minutes for mini muffins, or until a toothpick comes out clean.
